Hi, so I'm planning on making a PC with an Intel Xeon E3-1270v3 which only has 4 cores. I am asking this because I am unsure of why Linus used the Server edition of windows and not the mainstream ones. Was it because of the core count or just because it was a xeon? Or perhaps because it was dual-socketed?

Do I need Windows 10 Server Edition to have a Xeon for gaming and productivity?

Just to clarify, you only need server for multi socket systems which you eluded to.

On a single socket system you can use any version :)
