i5 8600k + H115i Pro OR i7 8700 + Cryorig H7/ Dark Rock 4

That seems a lot of trouble to go through, sure buying the i7 8700 to me personally seems more reasonable as Hyper-Threading on a high end CPU ends up helping more on longevity than overclocking however at this point, considering you probably got a z370 just stick to the i5 8600K and clock it at 5ghz.

Right now I have the i5 8600k and a H115i Pro on the way from Amazon. Im wondering if I should cancel my order, sell my CPU and get the i7 with a cheaper cooler. I hear the i7 is better than the i5.

Thanks. I'l just sell the i5 down the line and when I need it I'll get the i7 k version.
