What does Linus use to monitor thermals?

Probably HWinfo64. It's an extremely versatile program for measuring temps of just about anything in your PC with a sensor that reports to your OS.

 

I've used it for years and I swear by it. You can even set up an OSD through Rivatuner so you can see realtime temps and other statistics in-game.

He uses AIDA64 and HWinfo64 as far as I know.

 

He may also at times bring in an infrared gun to monitor temps more accurately, as not all temperature sensors on motherboards are accurate.
