In practice, there's going to be little practical difference between Windows 7, Windows 8.1, and Windows 10 for gaming - aside from DirectX12 support (if needed).
I personally can deal with the quirks of Windows 10 and therefore would suggest that, since it's getting the newest features, etc. But if you personally don't like Windows 10, I would suggest Windows 8.1 + Classic Shell Start Menu as a great alternative. It gives you a similar UI as Windows 7, but you're getting the newer Windows Kernel and lots of feature Updates (Seriously, the improved File Transfer utility is one of the best parts of Windows 8.1 over Windows 7).
