Some video editing can improve with really fast SSD's, thus the difference from one m.2 ssd and another.  Ima gonna keep you on the cheaper one.

OK, here you go.  About 200 bucks cheaper and you get a better GPU and (IMO) better case.  Other than that your choices were actually very solid.  If the mining crisis wasn't on the 1070 would have been an awesome choice.  

 

The GALAX 1080 is excellent but if you want a more color neutral one the 1080 mini from zotac is only $30 more.

 

Now you have the budget for 2 1440p IPS displays with 100 to spare :)

not really a thing but try going on youtube and searching budget rgb mechanical keyboard.  Try and find one that is available in AUS and you are good to go.

 

Here are the Cheapest decent/mainstream RGB mouse and keyboar.  If you drop from the stix to an AMP! GPU you still get RGB on the gpu but you can afford the peripherals.

Even with the cheaper GPU its still 80 bucks over budget.  I would get the windows on reddit for 30 bucks and then you would be just on point at $4K
