They only started calling 'Reference Card' as Founder's Edition with the 10 series. You might still have some problems with the 980 SLI, bottlenecks not so much, some performance loss. I would recommend getting a 1070 instead because it's simply newer runs quieter, has less than half of the TDP compared to the SLI. Maxwell is pretty much not going to get significantly better. You can get a 1070 for the same price or a bit cheaper compared to the 980s.

yeah get a 1070, sli support is hit and miss, but single gpu support is universal

No the ryzen 5 1600 won't bottleneck even a GTX 1080ti.

4GB of VRAM ends up becoming a bottle neck after a while, the Fury X's limited 1st Gen HBM maxed at 4GB in total, it just wasn't able to do some games that go past 4GB so you had to turn down some settings so it would actually run. Especially with Consoles having a shared RAM of 8GB, developers are optimizing more for consoles unless you have the golden grail which is id Software for DOOM (2016), extremely optimized.

I can second this 

it maxes out my 980tis 99 percent each in gpu and cpu Intensive games with no issues at all 

its a beast cpu
