I say just get a single 1070 and save yourself from worrying about sli. 780ti sli vs a single 1070 is a pretty massive difference in wattage 500tdp vs 165?. I switched from a 780ti to 1070 instead of going sli, which was an option for me. So that's my vote.

970 in SLI will beat the 1070, but be aware of the caveats of multi-GPU, such as power consumption, more heat, games not scaling well, needing reliable SLI profiles, tinkering with Nvidia inspector, etc.

Is anything bought aside from the cpu?
I like my 7xx series over the 9xx and 10xx.

Id get the classifieds as I never had one before. They are prolly better then the two cards I'm currently using.
Seeing in how I'm using my 4 year old cards over my new gtx 1080 setup.
