Which one is better for a gaming rig using either a 1070 or 1080 and an intel 6600k probably overclocking?

Well whichever is cheaper and has better aesthetic/features to you. Motherboard is the thing that has no impact for gaming at all unless it is some 10$ crappy chinese one on ebay but for you both of them mentioned are great.

Maximus VII is better for everything!

It just looks cooler, and I bet other components will like that, so they will provide more fps in game.

Well the Maximus VIII is a series of motherboard. Do you mean the Maximus VIII Hero? Ranger? Gene? whatever other ones their are?

 

In the end it really doesn't matter much. your CPU cooler and the silicon lottery matters most when overclocking
