What's the point of it if v-sync can stabilize it and they cost so much more

v-sync is not a variable refresh rate. g-sync and free sync change depending on the output of your GPU. They also don't create unwanted input latency like v-sync.

vsync just delays frames, G-sync (and freesync) actually make it so the monitor has the same refresh rate as your fps.

VSYNC is a fixed rate, the computer draws a blank screen between frames

G-SYNC & Freesync is a variable rate where the monitor adjusts its frequency based of what the GPU sends it.

g-sync is a software that allows the monitor to adjust its refresh rate at a locked number examples being 30 45 60 120 (not sure if that's a preset or not) and 144 hz (if you have an NVidia based gpu), to match the output that your shiny new gtx 1070 can muster. This is to reduce/eliminate the nasty fps dips that you get sometimes in games and can help eliminate screen tearing.

Dunno about the software part, but you'd need a Gsync module in the monitor for Gsync to work, hence the extra cost for Gysnc monitors unlike Freesync monitors.
