2 Builds - Which one should I go with?

I am a video editor and been researching about building my own PC. This will be my first PC build. I will be editing 4K footage, basic 3D rendering, and possible VR work. My initial budget was $2,000 but was willing to go over for performance.

I have been debating what will give me the best performance between these two builds or where I could be more cost efficient while maintaining performance.

Anyway I could find a middle ground between the two? Or should I choose one of the two builds? It may seem an obvious choice between the two builds but curious to what people think:

Build #1 (Editing PC)

http://pcpartpicker.com/list/MbbNNN

Build #2 (Editing PC PLUS)

http://pcpartpicker.com/list/r7Vr7h

Thanks!

i would go with the one with th gtx 1080 and the 6900k because you get improved cpu and gpu pefomance by quite a bit.

My Cheap But Good Rig: I7-3770s, Intel Motherboard (actually made by intel), 16gb DDR3, Nvidia Gtx 1070, 250gb Samsung 850 EVO SSD, 750gb HDD, Evga 500 BR power supply

Looks great but the Intel Xeon E5-2699 CPU is way out of my budget haha.
