why not get i5 instead?

nope i7 6700 costs the same and performs as well as an OC'd one.

 

personally i would go for the non k to save some money but both are excellent choices.

I7 6700k if you're overclocking, e3 1230 v5 and a c23x chipset mobo/e3 1231 v3 if you aren't(video editing wants the extra threads)

If you don't plan on overclocking, you can go with Xeon E3-1231V3 (Haswell). If your budget is not that limited and you want to OC, go with a Z170 board and i7-6700k. 

You'd have to wait a bit for the prices of the RX 480 to normalise in Europe.
