Use a controller for better maneuverability or just slow down at the right moment just before turning, then when you're in the middle of the turn, accelerate.

Generally I would agree but I never had any problems driving in GTA with a keyboard, and if it interferes in any way with your ability to shoot (which of course it would, since you couldn't do it while driving any more) then it's definitely not worth whatever benefit it brings.  Not sure if it would also override your ability to use keyboard and mouse while running, but if it does, then that would be even worse.

Well, on keyboard it's as simple as... You can't take corners at full speed, slow the hell down.

Now, I know what you're going to ask, "But how much do I slow down?"

And the answer may surprise you, you just need to figure out what kind of corner your vehicles can take at speed, and just apply that to each corner you come across.

 

GTA is forgiving with cars, you can break hard into the corner while you start turning, then hammer your gas as you hit the apex without much chance of completely spinning out.

I assume you don't just head full speed at the curve and turn... as in real life, you will have to slow down since the car only has so much grip, and if you try to turn faster/tighter than that amount of grip will allow, it will slide, or the game will just limit your steering sharpness to whatever the car can do without sliding.  Either way, you're not making it around the corner unless you slow down :)

Just slow down on turns, not that hard. Also certain cars have better handling than others so it also just depends on the car. Only use a controller if you feel like that's the only way to do it but even with a controller you still have to slow down on turns.

The final missions included following a car with a chopper, staying close, manouvering between tall buildings etc..it took me probably hundreds of tries to pass it.

break before you enter the corner and then accelerate out

driving in gta5 is fucking easy, but you still need to do the work

I thought about this a little more and I realized what you probably need are just driving tips in general, not necessarily specific to GTA, since honestly their physics is pretty decent at this point.  I'd lookup https://en.wikipedia.org/wiki/Racing_line if you're not already familiar.  Basically, it's says this: (please excuse my glorious paint-shop :D)

Essentially, don't try to hug the corner super tight.  it is likely not actually the fastest option.
