Euro Truck Simulator 2, American Truck Simulator when it gets released.

Some people won't consider Kerbal Space Program a simulator, but I feel it is.

Euro truck Sim 2, Farming Sim 2015, Goat Sim, Spintires

 

oddly enough, if you like trains - Train simulator 2015 isn't bad... just boring unless you like trains and don't buy expansions with cooler terrain.

iRacing, Asseta Corsa, Flight Sim. Train sim. Euro Truck Sim 2 is fun if you have steering wheels. Spintires gets old fast.

I Am Bread is pretty accurate. Kerbal Space Program and Assetto Corsa  are also very good.

If you like continuous lag.

The devs need to get off their asses and make the game utilize more than just one core. Hopefully, arma 4 will have better optimization.

Arma 3, Train simulator, NOT Sims. For PC at least. Anything else is sketchy.

Yes. Just search kerbal space program on youtube. It's probably the most detailed simulator for the money, and an active modding community. 

 

For flight simulation, I would recommend Flight Simulator X

For driving simulation, I would recommend Assetto Corsa, Project Cars, or Forza 6. Euro Truck Simulator 2 is great, if you're into that.

 

Farming Sim is also a really fun game. 

 

I'm not really sure what kind of answer you are expecting, I feel like almost all of these games are the top search results in Google.
