When i try to mod skyrim I tend to sped hours upon hours moding it and end up not playing a single second.

Its madness .

Does anyone know a good mod list i can use that makes skyrim better looking so I can avoid this insanity.?

You actually don't need that much, you need one of each for this:

 

-Textures. Actually this is an exception since you might need 2, I use a combination of Skyrim HD and Amidian Born

-ENB: Most favor realvision enb but any will do

-Lighting and weather: I suggest choosing an ENB first since they will suggest which lighting and weather mods to add

-Mesh improvements: See above: usually linked/suggested on the ENB you choose

-Body replacer: one for female one for male, nudity is optional however most include permanent underwear and such. This will likely suggest a custom skeleton mod which you should get since there's no visual impact but it will be very useful for many non visual mods

-Face enhancer: one for female and potentially one for male but again mostly optional

-Water mod

-Grass and forest mod, grass will have the most dramatic performance of all mods depending on your processor.

-Animation replacers: I just don't like some of the animations so I usually replace them.

 

That's about it really, you really don't need that many mods to make the game look awesome.

What I did to make my skyrim look pretty damn faptastic was installed ENB (you can choose one that you like), along with as many hd texture mods that I could find, and any mods that made cities filled with a bit more... green.
