Can someone explain all different graphical settings?

Things like Tessellation, SSAA and Advanced Phsx are they worth fps hit?

They all make stuff a lot prettier and more realistic. If you don't need it to look nicer, then diable these settings and you'll get less pretty graphics but more FPS.

AA:

Basically making pixelated edges less pixelated.

PhysX:
Having more particles in some games (best example is Borderlands 2 and one Batman game. Look up some gameplay with and without yourself.)

I don't exactly know what tessellation is.

I think AA is worth the FPS, PhysX maybe half.

SSAA is supersampling anti-aliasing where several color samples are taken from a pixel as opposed to just one sample at it's center. http://en.wikipedia.org/wiki/Supersampling

Nice explanation pic for tessellation.

Your PhysX picture doesn't work by the way

It works fine for me.

How about this? (PhysX off on left vs on at the right)

Yeah, this one works and is an accurate representation of what PhysX is all about

Metro 2033 redux just fps tanks with SSA 0 i get over 60fps if i put 2x i drop to 45 fps average.

If you can try sweetFX for SMAA, it gives the same result as MSAA but with less FPS (I think, correct me if I'm wrong) :)

Also you could try to use Supersampling/Downsampling to give nicer textures and a better AA, although it might drop FPS down a bit :/
