I see a great strong but inneficient i7 there that will run the server great

As for the phi's they wont serve any purpose. They are truely terrible even if you could get a minecraft server to use them. Absymal single core performance meaning forever lag. These things are EXTREMELY hard to get to use as they arent seen as a normal cpu and also dont normally work on normal consumer hardware.
Each core would be comparable to some second gen atom junk if you somehow got it working through masssive qmounts of effort
