Wondering if this PSU would manage this?

Mind you,that psu only outputs 552w on the two 12v rails. Still within the required wattage for a crossfire 270x but you are really pushing the psu quite a bit. Stick with a single card (anything up to R9 280 should be fine) or get something else with more stamina/wattage.

I'm wondering if the OCZ ModXStream Pro 700W would power this build with another card for crossfire in the future?

Without a sweat. You could probably get away with a 550 watt, but you might not have a ton of headroom.

No need, PCPartPicker has a wattage calculator built in and shows total system usage under load depending on what parts you add to the list.

The CPU is overclocked heavily so I'm going to stick with it. Plus I'm selling used parts to a friend so I'm practically giving it away.

How would I wire it since I'm using both 8 pins to a 7950 right now and one 6 pin to Sata and another 6 pin to molex for the fans?

500 Watts would be more than enough for this system.

Like I said there may be crossfire in the future which brings it up to 558.
