What are the disadvantages of not having a Windows key?

I just built my new gaming pc with windows 11 on it, but I haven't bought a windows key yet. The only downside I've seen so far is the "Activate Windows" watermark in the bottom left corner, but everything else like the personalization, login, and app usage is normal. If the only downside is the watermark, then I don't think ill get a key. Will this change with time?

No, the only real downside is the watermark. Personalization shouldn't be accessible to you, I don't know why it is, but even if you can't see it you can bypass the settings menu using things like command prompt or even just right-clicking and hitting "set as background." Windows 10/11 in particular are very lenient about the Windows key, so running it without a key is not a big deal.
