I'm setting up my first server. How should I setup my storage?

I plan on using Plex, a game server OS (mostly for Minecraft) and home assistant. I'd like to have a NAS available aswell but I'm not sure the best solution for that. 

 

I have a Dell PE r730 with 8 500GB SSD's

I would use 1 ssd as a boot drive, 1 ssd for minecraft/game server/home assistant, 4 ssds in raid 10 for nas, and then 2 ssds as plex (Combine volume).

Proxmox as a host OS, then everything else as vm/containers is what I would do.

You could have all 8 500gb drives in raid 5 (good read for plex, subpar write, not sure if it'd be good for MC), then use something like proxmox and boot it off a USB drive (dell servers typically have a usb port on the mobo).

Hypervisor would probably be your best approach to host various services like this. You'll want to familiarize yourself with CLI though if not already if you go with PROXMOX. It's a fantastic free and open source virtualizer but it's not strictly GUI/WebUI.

 

Personally I would use it and ZFS to RAID the SSDs. If you want performance over capacity setup RAID10. If you want capacity over performance I'd go raidz2 (RAID6). Writes will suffer but reads wont. Even on a 10Gig network this should offer decent performance.
