I really want WIFI and i don't know if i have to take a WIFI dongle or a built in WIFI

Im definitely in the former, as theyre far more transferrable from a build to another and thus opening you to good non-wifi board options.

And of course i threw in a pretty significant cost compression without compromising performance nor upgradability to 5800X3D which would still be very good CPU for a while.

6750XT is just a refresh of the 6700XT with overclocks built in. You better off going with Used 6800XT or just overclocking a 6700XT instead. My opinion on RAM overclock is pretty much just "run XMP or XMP with more voltage", so i throw in a pretty standard 2x8 3200C16 kit, the old fashioned.

I want to build a gaming pc with budget of 1000$

i want to play on 1440p with high FPS , this what i choose from PC PART PICKER

You can fit in a 6800 XT but it requires getting a cheaper board, SSD, PSU, RAM, and case. If  you wanted to stick with the same SSD you picked out you could go even cheaper on the case. As already mentioned, used GPUs can be a pretty good way to go as well.
