Which way do I install double noctua cpu fans?

Assuming the attached photo is the front cpu fan which is facing the front of the case, should the back fan be facing the same direction to exhaust out of the back of the case?

 

So on the back fan the label would be facing the back and the front would be facing the grill?

Yes, you'd want them to be facing the same direction. Otherwise they'd just be blowing air at each other and accomplishing next to nothing.
