yea the vms only use the cpu, ram(optional), and disk io as needed. For a home server one of those systems should be a good start. Id just setup vms with like 2 or 4 cores by default, and 2048mb of ram, and keep adding them until you have performance issues. Normally your ram limited with vms before cpu.
The os its self needs basically nothing
