Gonna be running a 2060 super in my new system and just gonna upgrade to 3070 or 80 when they become more available like this time next year. Is that smart choice instead of wasting all my money on 2070 super? I stream and play games just  on 1080p nothing crazy. So am I making a smart move because I want my build completely done end of October. It’s a huge upgrade from current system anyway!

Anything over 2060 is crazy for this purpose.

Keep the 2060S, for 1080p gaming that is all you need. Reconsider if you go 1440p 120Hz+ in the future.

Correct.  3070 is a 1440p card, and the 3080 is a 1440p 165Hz or 4K card.

If you're OK with the performance right now, i think you should be fine for 2-3 more years.

If you need more FPS or higher vram, then an upgrade to 2070 might do, BUT the price of 3070 makes it a less desirable.
I think you should just get 3070 instead of 2070.

for 1080P content I think that the 2060 is very good, the Nvenc encoder in the 2060 shouldnt effect preformence very much and if  you want to save the money you can

Asus, Gigabyte, MSI, Zotac. I think those are the big ones for Nvidia, try to get a card that says OC (overclocked) on it, in my expirance Zotac tend to make the best cards but dont quete me on that.
Any card that will say OC on it and isnt the cheapest one should be great, the difference is at most 5% in edge cases

2080Ti isn't a 4K card, that was marketing bullshit.  Or esports 4K/60Hz but not AAA.
