Side note, don't bother with the 3600xt if you haven't gotten it already, it's quite a bit of extra dosh for nothing.

esports like fps games or what?

if you mean fps games like csgo and valorant you'll be fine even on 4k with 150+ fps

those are not graphic heavy games

and if you do mean csgo, its a cpu intensive game so a strong cpu is as important as a good gpu in this game

if you mean other games you should also be fine

not sure if a 1660 super will hold at 1440p maxed settings in heavy games but for 1080p you're good

The Radeon card has more gddr ram but gtx is cheaper.

1660 Super, it's a solid ~20% faster, while also pulling slightly less power.

More VRAM is a really weak argument for GPUs used for gaming these days, unless thet make something like a 1060 3GB again

Uses : 

1440p 144hz 29 inch 2 sec ultra-wide (1440p, high, triple A gaming) 

 

Questions :

Is either cards enough for that standard? 

Should you buy buy a rx 5700 and flash the bios or spend the extra money to get an 5700xt?

How much of performance difference between the cards? 

Can you use an NZXT G12 on an RX 5700 or 5700xt?

You can flash the card. There are plenty of guides to flash it.

Then it depends. On your budget and workload. You can probably get a 5600xt that is basically a 5700 with a smaller frame buffer. Or just get a 5700xt or even a 5700. It depends on your budget and what you're willing to spend.
