Question is this a good system for gaming?

before i start my psu gpu ans storage is the same and pulled from my old fx 8320 gamin rig so they can not be changed really but feel free to give me recommendations
cpu-ryzen 5 2600x
motherboard-gigabyte b450 aorus elite
ram-crucial ballistix sport AT ram 8x2 3200mhz
gpu- nvidia founders edition 980
alaska liquid cooler (i know i need to upgrade this to a better quality one)
psu- thermaltake 700w smart rgb psu
1 1tb hdd
1 2tb hdd
1 3tb hdd
1 128gb ssd

It look pretty decent for me. You should be able rust most recent games at 1080p 60 FPS and high settings.

The Thermaltake PSU is a campfire waiting to happen. Everything else is fine for 1080p high.

I enjoy buying junk and sinking more money than it's worth into it to make it less junk.

Sure you can game on it, but depends what games you want to play and and how many FPS you want.

Considerably, but 750W is overkill. You could easily go down to 500W to save some money with the components you have.

i mainly play siege, no mans sky and ark survival evolved and i dont mind fps as long as its not below 60

A CX550 would be fine. CXM grey label units are fine but the 2017 refresh CX PSUs are a bit better, and usually around the same price.

would a 550 be enough for a rtx 2060 or 1070 and i need to keep into factor my 980

Easily. You'll be hard pressed to go over 550W unless you have a very power hungry GPU and/or CPU. Which you don't, all 3 of those GPUs will be fine, and a 2600X doesn't pull much power either.

Yes, 550W will be plenty for your 980 until you replace it, and then it'll be fine for your 2060 or 1070. Shoot for anything Tier B or better in this list:
