Need Help Planning A Build!

Budget (including currency): $1,500 USD

Country: United States

Games, programs or workloads that it will be used for: Video Editing (Premiere & After Effects), Streaming (Using OBS), Gaming (Witcher 3 & Destiny 2)

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): 

A friend asked for help with building a PC since she's coming from a Mac. I'm not the best a picking parts, seeing as how I've yet to build my own PC, but I figured PCPartPicker and a bit of knowledge would bring me a decent part of the way there. I do have a parts list, which I would appreciate feedback on and also suggestions on where I could cut cost without sacrificing too much in terms of performance.
While the budget isn't too limiting, I've already picked parts that exceed that by about $500 USD. I wanted to try and pick parts that would last her a fair amount of time, but I'm probably going overboard for what's strictly necessary

After looking for pricing and availability, I ended up with a total $2,070.91.

Also, while she would like RGB Lighting, I'd prefer to focus on performance first and foremost. Even if that means she doesn't get much in the way of rainbows everywhere.

little over 1300 with room to upgrade RAM, GPU, or more storage. 1660 is good to start off but  right now is now the best time to buy a GPU since 3000 series are out and new AMD GPU coming out on the 28 I think, I would wait till next year to upgrade since  3000 GPU won't be in a high demand like now. I personally wouild go with the 3070 for 499. WIth 200 you can buy another the same ram kits or go with  8 more TB of HDD storage or 1-2 TB of more SSD storage.
