So I picked up a new GPU today and went to install it and then I realized it is an 8 pin connector and I only have a 6 pin cord.  Can I use the 6 pin or is it smarter to just get an adapter that goes 6 to 8 pin?

It's smarter to get a PSU actually meant to supply 8 pin PCIE levels of power, so a PSU which has this connector already.

6 pin vs 8 pin (6+2 pin) is 75w vs. 150w, an adapter is definitely not recommended and only using the 6 pin will - best case scenario - crash the system when the GPU actually needs the full power.

EDIT: wait, next to this 6 pin connector you have a 2 pin connector hanging off. Plug this 2 pin into the GPU as well. Boom 8 pin/6+2 pin.
