If you have the money, try getting Noctua fans. They are expensive but are good and quiet. If you can't spare the money, get the Fractal Design Venturi fans. They're not as good as the Noctua ones but still an excellent choice.

1) They're not true. ASrock is a fine board manufacturer just like any other. In fact, the only board partners you should stay away from is ECS and Biostar.
2) The bare necessities for a mobo are: beefy enough VRMs to supply power to the CPU, and that's it. Everything else is extra. Hell, an h81 chipset motherboard can still run a Xeon E3 1231 just fine. So long as the power delivery is there, you're good.
3) Best brands? No such thing. They're all pretty much repackaging the same stuff with a different bios.
4) Focus on what you need and no more. If you don't need overclocking, you won't need a Z chipset board, and so on. Unless you're overclocking, with how fast DDR4 is an i5-6500 on an h110 board with a single stick of DDR4 is a great budget solution. The memory bandwidth is still high thanks to DDR4 yet thanks to the open DIMM you have room for expansion. Overclocking isn't necessary on the locked i5, and it supports your GPU just fine.

Another thing to keep in mind is if you will be using voice chat or doing anything involving hearing/being heard while typing. Your team mates may not enjoy the sound of you typing all the time.

This isn't really part of building, but the drivers and installs are always a pain, especially if you don;t have a disk drive because then you have to go to another computer and download the drivers onto a USB stick so you can access the internet. I know Linus says to throw i=out the install disks that come with products, but none of the motherboards that I have purchased have come with Ethernet drivers, so I have had to install those using the disks

For me it's cable management, spending hours to get what you dream about and only to have to replan new routes/extensions ect.

I'd say rear cable mangement. Every build I do I go in with the mind set of having nice tidy cable but it never happens. This problem was just amplified when I got the Air 540 and I could see that I could just bundle them in there.
