how much sound gets in on say an airplane or crowded area with open back headphones

It depends how loud you listen, but if you don't listen too loudly, then you should be fine.

You can turn up the volume until it overwhelms outside sounds, but at that point you'll be disturbing people sitting next to you on a plane

If you were listening in a hotel room with the door closed, you'd be fine.  Nice thing about headphones, including open, is that they don't need to fill a large area with sound unlike conventional speakers.  A person would have to be pretty close to you in order to hear at normal volume.  At loud volume, a person probably wouldn't even hear it if they were in a closed room next door to you.
