What are these connectors on GPU for?

What are the left side notches for? Am I supposed to keep them covered? Where do they go?

They're for your SLI/Crossfire bridge

Those are SLI fingers, you would use them with an SLI Bridge when linking two identical GPUs together (IE: 1070 with 1070, 1080 and 1080, etc)

Should I leave the plastic covers on them or will they melt with the heat?

No heat at all so it's up to you, doesn't matter either way really

They are there so you can connect multiple GPU's in SLI, if you don't have more than one graphics card just take of the covers and don't bother with that connector.
