the 2700x is overpowered for the 1060 3gb.

i would get a 2600 and a 1070

I would drop the CPU down, and up the GPU if you are focused on gaming (not going to be streaming games)

More cores would help with editing and (maybe?) 16gb of ram would help too

Ah. Well, the Ryzen 7 makes more sense for rendering videos, unless your editing software can utilize the GPU for that. But the extra cores doesn't really scale well in games, so they're wasted there. A Ryzen 5 doesn't do to bad in video editing in my experience, though. (I have a 1600X)

What's the PCs primary purpose? If the main thing is gaming, then I'd personally pick an i5 8600K for it's single core performance, assuming it fits the budget.

For mainly gaming and some content creation, you should get a cheaper CPU and a higher end GPU. The 2600 and 8400 are good compromises. 

While the B350 PC Mate is cheap, it's not good, and should definitely not be used with a Pinnacle 8 core. 

Faster RAM would benefit a Ryzen system a lot. 

You should absolutely get an SSD. It speeds up the system and would help with editing. 

Since you don't have a monitor yet, the RX 580 is a great alternative to the 1060 6GB. It performs equally (depends on the game, some it performs better, some it's worse), and it supports Freesync, which will improve the experience a lot. Make sure the monitor supports Freesync. 

The M12 II is ancient and way overpriced. There are many better options.

Yes. The Xbone and PS4 are about equal to a GT1030, the PS4 Pro and Xbox One X are about equal to a heavily underclocked RX 570/580
