Is it possible my card will be able to handle playing games on these monitors?

It'll be able to play, just not each one at 144fps in every single game. My buddy has two 980tis for his 3 144hz 1080p displays. Furthermore, many games don't even support multi-monitor configurations.

no but if you play at 3x 1080p yes

What if I was just playing on one monitor rather than using all 3. Would that still cause an issue?

no that would work perfectly fine.
I have 1 GTX980 and a 27" 1440p 144hz w/ gsync monitor and I am able to hit ~60fps in most games :) (which looks pretty daamn fine with gsync)

well i run a x34 3440x1440 on a 1070 and hit 100fps so a 1080 ti will do great on a single moniter, the ti would run 3 1440p's but not each at 144hz

Its can run them at what ever hz you set without issue. Frames will depends on game and settings. So old and easy stuff would work.
