Well 1080p cheapest brand new GPU if you don't care turning all stuff to low and focus mainly e-sports would be the RX560 ~ GTX 1050 but I strongly advise considering either the RX 570 or GTX 1050 Ti as the price increase is more than worth in performance gain.

If you want to play max out then a GTX 1080 is needed.

 

If you want to play on hybrid of ultra~high the GTX 1070 / 980 Ti would suffice.

id go for a 1050TI, good balance in every respect but it depends on what the rest of the system can handle, what games and what settings you want to play at

I spent $2500 on building my PC and all i do with it is play no games atm & watch anime at 1080p(finally) watch YT and write essays...  nothing, it just sits there collecting dust...

You'll need a ultra wallet ;) to go for the best so that you can rest assured you can achieve your purposes in any game ;)

1080p at 120Hz Ultra.. you need at 1070 or better (1070 Ti, 1080, 1080ti etc.)

 

If you are okay with 60 fps at Ultra settings, 1060 will be good enough.

 

If you are okay with 60 fps Medium settings, 1050Ti will be good enough.

 

Just depends on your budget. You start out by asking what is the "cheapest" GPU, but then you want 1080P, 120 HZ and ultra settings. The "cheapest" in that case is a 1070 or 1070Ti, which isnt cheap at all.
