The TL;DR is that it's a monthly subscription service, similar to Vessel, that allows you to access and watch content early, before it hits YouTube.

It has other perks, including a private subforum. If you donate monthly to the forum already, you generally get Floatplane Club for no additional fees.

It's a way to support LMG, and it allows them to make more money per view from you (Since your YouTube view is worth less than a penny per video).

What it means by "Floatplane Pilot" is that these are the people who are testing Floatplane out. It is a monthly subscription so as recognition of being an alpha tester effectively, they get a contributor name.

In addition to what has been mentioned before, I think 'Pilots' is a kind of double thing. Pilot as in the person taking control of a (float)plane and also pilot as in the first batch of people (like a TV show has a pilot to see if it will be a success)

First, we attend flight school. Then we need 250 hours of flight training before getting our pilot's licences. Typically other floatplane pilots help us here.

Then, we apply for a job shipping videos out to viewers with LMG. LMG uses floatplanes to save money on building expensive airstrips and other infrastructure. This is why videos are sometimes delayed with the weather, it's hard to land on choppy water. We deliver to the nearest body of water, and it's all by truck from there.
