High Performance CPU Without Overclocking?

I want a high performance cpu, but I'm not a big fan of overclocking (requires good mobo and cooling and stress testing). I know that there is the i7 non-k and the xeon - is there any other options? Or would it be worth it to buy an overclockable cpu without actually overclocking like the Ryzen 1700?

As owner of the i7 7700 myself I can assure you it is high end enough for normal use, gaming and light workstation.

Gaming go for 7700k.

Video editing, rendering, lots of multitasking, etc go for R7 1800X.

Best cooler you can get Noctua NH-D15.

7700k and don't overclock it.
