Both are excellent choices so you can't go wrong, as for color options that just depends on how you design your pattern. My personal favorites are usually tri-tone type color schemes with two base colors and an accent.

So, which base colours and what accent? All my components are black/red, with more black than red, and white LEDs on the ram.

MDPC-X, I used Telios, Their sleeving is tight which made it difficult to thread some cables through. MDPC-X is higher quality.

Yes, I have used both. I will be using MCPC-X going forward. Don't even touch Paracord unless your force to it. It's a mess to work with.

No it's PET. I have some, but I found it a bit harder to work with compared to MDPC-X. My two favorite brands for Sleeving is MDPC-X & DarkSide Sleeving. I use DarkSide Sleeving for more special type of sleeving. Which requires a different thickness that MDPC-X does not offer.

 

Your Basic PSU & Sata cables MDPC-X is the Sleeving to go with.

That's going to be up to you, I personally stick with Pure black for my cables since I would never have to re-sleeve any of my cables if I change motherboards or cases.

I was thinking Black-black-carbon-carbon-red-red-red-red-carbon-carbon-black-black for the 24 pin and black-red-carbon-black for the 8 pins. Any feedback?

MDPC-X does not make carbon color. Only Black & Shade.

I'm torn, does it look good? I am really not sure. Should I use diamond red? Italian? Colour x?

The color will just depend on what the sleeving you get the sleeve configurator is  more for designs and to give u an idea. I think that loooks quite good.

Looking at MDPC's selection the Italian red looks the brightest which would probably best match the MSI color. if you want more depth I have seen good sleeve combos that use two different shades of red or color to accent the sleeve.

Yeah that adds a bit more complexity but I think it would be good if you like the slight differences in color tones.
