If I went with the 6800K processor, would I need to get a different motherboard?

Yes. The 6800k is stepping into an 'enthusiast' chipset. Basically, the 6700k is the highest end CPU that'll fit in a LGA1151 socket, z170 for overclocking.

The i7 5820k is last gens entry level cpu to the x99 platform. The i7 6800k is the current gen entry level cpu for the x99 platform. z170(for overclocking) and h110(not for overclocking) is for skylake. z97(for overclocking) and h81(not for overclocking). A cpu can overclock if it had the unclocked designation of 'K' at the end. For example 6700 can't(easily) overclock and the 6700k can.

Thanks for the reply and it is starting to make sense to me. Maybe I am overly ambitious albeit I would like to get into overclocking and learn more of the technical aspects.
