I don't like the idea of using the razer core if I need to do GPU work.  I would like to have a dedicated graphics card in the machine.

razer stealth had discreet laptop graphics, usually 980m or 970m which is pretty amazing for under 2000 and everything else it does.

I travel a lot and a desktop doesn't fit my purposes, I need a machine that I can use for professional creative work such as photo/video editing and rendering on the go.

I would go with what Pendragon mentioned. The only downside is that you don't get touchscreen.

No, the point of the stealth is literally to not have discreet graphics. What are you talking about?

Yes, you actually find most of them there. As for with 4k that might be slimmer but there are plenty of 1060s, even tons of 1070s under $2000 usd. What are you referring to?
