Running 5 monitors on 2 Nvidia GT 710 good idea?

You should be able to run GT 710s on a single PCI-E 3.0 lane so yeah, should be no problem if you configure them in the BIOS.

I would buy GT 730s (the GGDR5 version) if you haven't already, because those support 4K displays and 710s don't.

As far as Medusa's Setup goes, an IGPU would only be good for an additional display or two anyway. 

 

For display output only (no gaming or compute intensive workload) a GT 710 or two should theoretically do well enough.
