What's the point of stamina when I can just sprint unlimitedly? [GTAV]

Hi guys,
So i was playing GTAV, and I just don't get what's the point of the character attributes. Lung capacity I understand, since not breathing in water has a definite impact on the character's capable duration in the water. But, the characters can sprint unlimitedly, how does stamina work then?

Nope. For example Michael's mission with his son biking to Vespucci beach... Michael did not slow down at all.

if you keep tapping A to spring your health will start to go down if you sprint too much.  The higher your stamina the longer you can sprint before your health will drain.

How long before health start draining, cuz so far it doesn't seem to have an effect on health at all.

that only happened to me on a side mission where it seemed like it was scripted to happen, idk though, it's Grand Theft AUTO not Grand Theft walkathon. so I haven't really tried sprinting endlessly.
