I have an  i5-3570k, which is actually an excellent overclocker, got it to 4.9GHz stable, low voltages, with my crappy cooler, could have pushed it further, I won the silicon lottery with it, most people couldn't get over 4.4GHz.

I have the option to upgrade to a i7-2600k for free (well technically for about 3 hours of labor), which is slightly worse at certain things, only supports PCIe 2.0, but has hyper threading, which would be helpful for virtual machines, which I've been using a lot lately. I can get it up to about 4.6GHz stable.

My motherboard is an Asus P8Z77-i Deluxe/WD.

Should I do the trade?

If you edit video or in you case make a virtual machine it would be a good trade.

If it only supports PCIe 2.0 it might bottleneck your gpu substantially if its a gaming rig the hyper threading isnt really worth it and even more so since you have a good overclocker 3rd gen i5. in short id go with the i5

but... pcie 3.0 8x is fine, i'm sure pcie 2.0 16x, which is equally fast, should be fine as well.

PCIe 2.0 is 2x as fast as PCIe 1.0 16x. Not even a 295x2 or Titan Z can max out a PCIe 1.0 x16 slot. So it WILL NOT be a bottleneck.

PCIe 1.0 16X is not a bottleneck for any GPU.

ah so in op's question its pretty much up to whether or not he needs the threads or not

I'd personally stick with the 3570k simply because it can probably hit the coveted 5ghz with delidding.

In your scenario the i7 would work wonders with virtual machines, also you should have fun overclocking that sandy bridge chip :P

My Ivy Bridge chip was actually a better overclocker, although the i5-2500k I have in the family computer I got over 5GHz

Correct.

I am using two HD 7970's (AKA R9-280X), and they are a tier above the GTX 670 performance-wise, and they are nowhere near bottlenecked by the PCI-Express 2.0 slots.

If you want the extra threads like everyone already said. I'm running a 2700K and I can overclock it pretty well, so if you do video editing or other CPU intensive tasks, a  OCd 2600K might help.
