I was just wondering how many 4k monitors  MSI GTX 980 TI would be able to run on full settings, if any

Define "Full", 

and one at max.

Gaming? 

Well if you want to do multiple monitor gaming it's 3 or more.. 2 monitors is not worth it and no it can't run 3x4K on most games.

So I will go for 1 or 3 on non demanding games

Simultenously, 1. The graphic power for surround 4K is not here yet, on NCIX they ran 3 4k displays with 4 titan x, and it wasn't enough, stuttering and low FPS, so, we are simply not there yet, that's why so many people went for 1440p, 4k is just not reasonable for now.
