It'd probably degrade very quickly, like mayonnaise.

Anything that can fill in the little imperfections on the heatspreader and the CPU-cooler will "work" as thermal paste, the problem is that other materials (like toothpaste, mayonnaise and nutella) will dry up really fast and then be useless as a thermal compound. Yes it works, but not for long.
