I am infact a proper German and I can tell you that the Duden is never wrong. If you're not sure about something, you ask the Duden and it'll tell you. It's the Bible of German.

 

You will, however, not use it in a sense of having multiple stems of spinach - it is referring to multiple stems of it.

No, of course not - it's not numerable, comparable to money. You don't have 2 moneys, do you?

 

There is, however, a plural for the word itself - being referred to multiple stems of the spinach itself.
