I am infact a proper German and I can tell you that the Duden is never wrong. If you're not sure about something, you ask the Duden and it'll tell you. It's the Bible of German.

 

You will, however, not use it in a sense of having multiple stems of spinach - it is referring to multiple stems of it.

I think you're trying to make it like the word fish. You don't say fishes, you just say fish.
