You can survive on a 850 watts PSU with 80+ gold btw... No need for such a high PSU and why would you go 4 way SLI WHY D:

I'd rather spend half of that on a just as playable gaming rig that's not overkill and spend the other half on useful things. Heck, I could get a used car for $3000

Yes, you can. You just need to have a motherboard that has a PCI splitter chip and the board he picked has one.

Why the hell are you going 4790k instead of at least 5820? It's like 50 dollars difference. That's 1% of your build for 50% more cores.
