Got an Amazon special from 2020 with the forementioned PSU that I'm trying to overhaul. Basically all I'm keeping is the PSU and case. Will this PSU reliably support an RX580 8GB or A380?

The PSU is junk. Group regulated, lack of protections, very low quality and a voltage switch. Only garbage PSUs have a voltage switch.

If running only a stock 6500 2 hdd's and a pci powered gpu, think it will last for a while?

It's been powering a 2400 and pci powered gpu for about 4 years and the past year or so added the 2 hdd's

*I can replace the psu some day but chances are being for a friend of a friend it's getting expensive and I will probably forget about it once the new system is up and running. I don't have enough on me for a legit psu.
