Input on a simple video ingest PC?

I found an assortment of spare parts during spring (summer) cleaning and got the wild idea to create a simple video ingest PC that can run on its own and save my tons of old Hi-8, VHS and other media to digital as I'm working on my main PC. It would not be for actual editing, but would be converting.  Below are my parts and thoughts, but I'm very open to input.  (Yes, a Ryzen 3 could be faster, but the key here is to spend as close to nothing because it's a side project.  I just need something serviceable.) 

 

Antec Sonata quiet case

PC Power & Cooling Silencer

     750 Quad Red PSU

ASRock Fatal1ty 990FX Pro mobo

AMD FX-8350 Black Edition

AMD Wraith Prism (came with CPU)

Kingston 1600 RAM 16GB (4x4GB)

MSI Twin Frozr R9 270 w/2GB

Crucial MX500 500GB SSD

Seagate 2TB HDD

  (addl storage TBD if this works.

      Or maybe I'll build a NAS!)

TBD multi-card reader for 5.25" bay

Audigy 2 ZS w/breakout box

Hauppauge USB-Live2 converter for

     old VHS & other w/analog outs

Might even add a SCSI card to copy

   from old portable ZIP & JAZ drives

 

The mobo straddles the older and newer eras, so I have things like onboard Firewire and older PCI slots, which I'll need.  I'm thinking Windows 7 64-bit Ultimate for older driver compatibility. The Audigy breakout box gives me some extra audio options. If CPU temp becomes an issue, I'll grab an appropriate Be Quiet cooler. If it makes a difference, I could go Ballistix 4X8GB RAM (still 1600).

Specialised video capturing forums such as videofaq, videohelp and doom9 might help you with this better than LTT problem. Whatever you do, don't get one of those cheap capture cards like ezcap
