The 11700k doesn't really make sense. Go 10850k or AMD.

Is 630 enough to get to 120 fps

Do you have a high refresh rate monitor? I understand a higher fps makes things appear smoother on lower end display, but 120fps is very specific.

Depends on if you plan to mod the game to high hell or not. Without mods my family's old computer (4gb of ram, some 2009 CPU) ran unmodded minecraft like a hitch. But times have changed so I'm not sure, sorry

Budget? Best bank for buck is probably between a i5-10600K or the AMD PRO series APUs.

Like @davemcsaid, wait for the Ryzen 5000 series APUs to come out, but if you need one now, the 10900k, 11900k, and 10850k are pretty good choices, the 11900k is newer and the 10900k/10850k are very similar in performance. Whatever you can get your hands on. But still, the 5000 apus are the best choices, once they come out.

That would work, but yeah if you want high-end, i7-10700K, i9-10850K, i9-10900K, and i9-11900K are all great choices right now.

Absolutely not. The 11900K is a waste of money.

Once again not great value and won't perform much faster than the 11600/11700
