I currently have the 120mm one of that but it really doesn't work too well for me as I have spiked up to 97c before and whenever playing games average 80-90c

I was planning to buy the X73 360mm or the X63 280mm, which one do you think would be better?

120mm is gonna suck no matter what brand, though

If I was to overclock it would probably depend on good how hot it gets at base clock

There are thicker 120mm's that should be fine and can be a decent option depending on the case and mounting. The Liquid Freezer II 120 is an example. 

That being said, a larger rad is usually better.

What case and cooler are you using? Are you using default motherboard settings?

NH-D15 all the way - run them in my home and work rig (both using i9 9900kf). You need to be careful with RAM height but a super cooler.
