I voted for the 10850k simply because right now it can be snagged for a song if you look hard enough. I bought mine for $320 a month ago after my i7 5820k died.
The 5800 and the 10850k are neck and neck for a lot of benchmarks and trade blows in others. the 5800 is easier to cool and generally the motherboards are cheaper. 

I'd suggest getting whichever combination cpu/mobo is cheaper.

with prices being equal i'd go for the 5800x. the faster single core performance will help with overall responsiveness and tasks that rely on single thread performance.

or you could optimise and cut corners in the rest of the build to afford a 5900x.

also, no need to make a new post, since people were still replying in your old one.

10850 k is just 30 USD cheaper here in Europe, so not a big difference in price. I don't like that 10850 k draws a lot of power. I am not sure about the other two.

he probably have a lot of money for the budget, he could save later on so when the 5900x are in stock then he snagged it.

yes it will draw a lot of power but pair with a 3080, a 850w is enough but a 1000w might not be overkill here

I already own 650 w PSU, so I guess it would not be enough for 10850K?

PSU model: Seasonic SS-620GB Active Bronze

GPU: AMD Radeon r9 270x (Really old, I know)

For the future, not sure yet. I wont be gaming, all I need is to render videos. So perhaps Asus GeForce GTX 1050 TI OC 4GB 128b would be enough?

For 1200-1300 Euros, you probably get a good prebuild (rtx 3060...) instead because it will blow you current pc away out of the water.
